Ghanaian Food Recipe: Uziza Pepper Goat Light Soup

Ingredients:

  • 500g goat meat (chopped)

  • 1 tbsp ground Uziza / Black Pepper

  • 2 fresh tomatoes

  • 1 large onion

  • 1 tbsp tomato paste

  • 1 scotch bonnet (optional)

  • 1 tbsp ground crayfish (optional)

  • Salt to taste

  • 1 Maggi cube or seasoning of choice

  • 4 cups water

 

Instructions:

  1. Wash goat meat and season with salt, onions, and a sprinkle of Uziza pepper.

  2. Simmer meat with chopped onions and tomato paste for 15 minutes.

  3. Blend tomatoes, onions, and scotch bonnet; add to the pot.

  4. Pour in water and bring to a boil.

  5. Add remaining Uziza pepper, crayfish, and seasoning cube.

  6. Simmer for 30–45 minutes until meat is tender and soup is aromatic.

  7. Serve hot with fufu, rice, or boiled yam.

  • Nigeria: Uziza or Ashanti pepper

  • Cameroon: Piper guineense (commonly used in traditional medicine)

  • Ivory Coast: Poivre noir africain

  • Benin: Kpéssè (in Fon language)
