Recipe: Ugba Abomu (Fermented Bean Salad)

Ingredients:

  • 1/2 cup NINA UGBA (rinsed in warm water)

  • 1 tbsp ground crayfish

  • 1 tbsp palm oil

  • 1 tsp powdered pepper or fresh scotch bonnet (crushed)

  • 1 small onion (sliced)

  • 1/2 cube of seasoning (optional)

  • Salt to taste

  • Boiled yam, plantains, or rice (for serving)

Instructions:

  1. Rinse UGBA in warm water to remove excess salt and fermentation residue.

  2. In a bowl, combine UGBA with palm oil, crayfish, pepper, onions, and seasoning.

  3. Mix thoroughly until evenly coated.

  4. Serve with boiled yam, ripe plantains, or rice.
