Egusi Soup with Crayfish

 

Ingredients:

  • 1 cup ground egusi (melon seeds)

  • 1/2 cup palm oil

  • 1/4 cup NINA Dried Crayfish

  • 1 cup spinach or kontomire (cocoyam leaves)

  • 1/2 lb assorted meats (goat, tripe, cow feet)

  • 1 tsp ground pepper

  • 1 onion (blended)

  • 2 seasoning cubes

  • Salt to taste

Instructions:

  1. Boil assorted meats with salt, onion, and seasoning cubes until tender. Set aside.

  2. Heat palm oil in a pot, then add blended onion and crayfish. Sauté for 2-3 minutes.

  3. Stir in ground egusi and let it fry for 5-7 minutes, stirring constantly.

  4. Add meat stock and meats into the pot. Simmer for 10 minutes.

  5. Add spinach or kontomire, and cook for another 5 minutes.

  6. Adjust seasoning and serve hot with pounded yam, fufu, or rice.
