Egusi Soup with Crayfish
Ingredients:

1 cup ground egusi (melon seeds)

1/2 cup palm oil
-
1/4 cup NINA Dried Crayfish
-
1 cup spinach or kontomire (cocoyam leaves)

1/2 lb assorted meats (goat, tripe, cow feet)

1 tsp ground pepper
-
1 onion (blended)
-
2 seasoning cubes
-
Salt to taste
Instructions:

Boil assorted meats with salt, onion, and seasoning cubes until tender. Set aside.

Heat palm oil in a pot, then add blended onion and crayfish. Sauté for 2-3 minutes.

Stir in ground egusi and let it fry for 5-7 minutes, stirring constantly.

Add meat stock and meats into the pot. Simmer for 10 minutes.

Add spinach or kontomire, and cook for another 5 minutes.

Adjust seasoning and serve hot with pounded yam, fufu, or rice.
