Recipe: Cocoyam Fufu with Groundnut Soup (Peanut Soup)
Ingredients for Groundnut Soup:

1 cup smooth peanut butter

1/2 lb chicken or goat meat

1 tomato (blended)

1 onion (blended)

1 scotch bonnet (blended)

3 cups water or stock

1 tbsp tomato paste

Salt and seasoning cubes
Fufu Prep:

Mix Tropiway Cocoyam Fufu flour with water until smooth.

Cook over low heat, stirring continuously until stretchy and smooth.
Soup Prep:

Brown meat in a pot with salt and onions.

Add tomato paste, blended mixture, and simmer for 10 minutes.

Stir in peanut butter and water. Simmer until thick and aromatic.

Serve hot with cocoyam fufu.
