Ingredients:

1 can Mackerel

1 medium onion (sliced)

2 medium tomatoes (chopped)

1 tsp tomato paste (optional)

1 fresh chili pepper (optional)

2 cloves garlic (minced)

1 tsp ground ginger

1 Maggi cube or seasoning of choice

Salt to taste

1/4 cup vegetable oil

Chopped fresh parsley or green onions (for garnish)
Instructions:

Heat oil in a saucepan and sauté onions until translucent.

Add garlic, ginger, chili, and stir for 1 minute.

Add chopped tomatoes and tomato paste. Cook until the sauce thickens.

Gently add the Mackerel along with its tomato sauce. Break the fish into large chunks.

Stir gently and simmer on low heat for 5–7 minutes. Adjust salt and seasonings.
