Recipe: Kokonte with Groundnut Soup
Ingredients for Kokonte:
- 2 cups Madam Jas Kokonte flour
- 4 cups water
Instructions for Kokonte:
- Boil 3 cups of water in a pot.
- Mix 1 cup of cold water with Kokonte flour in a bowl to form a smooth slurry.
- Gradually add the slurry to the boiling water, stirring constantly to avoid lumps.
- Stir continuously until it thickens and becomes stretchy (about 10–15 minutes).
- Serve with soup.
Ingredients for Groundnut Soup:
- 1 cup groundnut paste (peanut butter)
- 1 lb chicken or goat meat
- 2 tomatoes
- 1 onion
- 1 scotch bonnet pepper
- Salt and seasoning cubes
- Water
Instructions for Groundnut Soup:
- Blend tomatoes, onion, and pepper.
- Boil meat with spices until tender.
- Add blended mixture and simmer.
- Stir in groundnut paste diluted in warm water.
- Simmer for 20–30 minutes until thickened and flavorful.
- Serve with Kokonte.
