Ghanaian Recipe Using Funde (Fonio):
Fonio Porridge (Funde Koko)
Ingredients:

1 cup African Best Choice Funde (Fonio/Fundi)

4 cups water

1/2 cup evaporated milk (optional)

2 tbsp sugar or honey (to taste)

1/4 tsp salt

1/2 tsp ground nutmeg or cloves (optional)
Instructions:

Rinse the fonio thoroughly in a fine mesh sieve to remove any dust.

In a saucepan, bring water to a boil. Gradually add the fonio while stirring to avoid lumps.

Reduce heat and simmer for 8–10 minutes, stirring occasionally until it thickens.

Add salt, sweetener, and milk if desired. Stir well and simmer for another 2 minutes.
