Recipe Using Fish Masala:

Spicy Fish Stew (Eba ne Nkontomire Mpoano Nkatsenkwan)

Ingredients:

• 2 tsp Tropical Heat Fish Masala

• 1 whole tilapia (cleaned and cut)

• 2 tomatoes (blended)

• 1 onion (chopped)

• 1 scotch bonnet pepper (optional)

• 2 tbsp tomato paste

• 2 cloves garlic

• 1-inch ginger

• 1 cup palm oil or vegetable oil

• Salt to taste

• 1 seasoning cube (optional)

Instructions:

1. Blend garlic, ginger, and scotch bonnet pepper with a bit of water.

2. Season fish with salt and 1 tsp of Fish Masala. Let it marinate for 20 minutes.

3. In a pan, heat oil and sauté onions. Add tomato paste, blended tomato, and the blended spice mixture. Cook for 10 minutes.

4. Add the remaining 1 tsp of Fish Masala and season to taste.

5. Add fish and simmer on low heat until the fish is cooked and sauce thickens (about 20 minutes).
