Ghanaian Recipe Using Cloves Peppre: Spicy Ghanaian Shito (Hot Black Pepper Sauce)

Shito is a beloved Ghanaian condiment made with dried fish, spices, and hot peppers. Cloves Peppre adds a distinctive warm, aromatic depth.

Ingredients:

  • 1 tbsp Cloves Peppre

  • 2 cups dried fish or shrimp powder

  • 1 cup ground dried chilies

  • 1 tbsp ground ginger

  • 1 cup vegetable oil

  • 2 medium onions (finely chopped)

  • 2 tbsp tomato paste

  • 1 tsp salt

  • 1 stock cube (optional)

Instructions:

  1. Heat the oil in a saucepan.

  2. Add chopped onions and fry until golden.

  3. Stir in tomato paste and cook 5–7 minutes.

  4. Add dried fish/shrimp, chili, ginger, and ground Cloves Peppre.

  5. Simmer gently, stirring occasionally for 30 minutes.

  6. Add salt and seasoning cube to taste.

  7. Store in sterilized jars once cooled.

Serving: Delicious with rice, kenkey, banku, or yam.
