Ingredients:

2 cups Goya Blackeye Peas (soaked overnight)

1 medium onion (chopped)

2 medium tomatoes (blended or chopped)

2 tbsp palm oil or vegetable oil

2 cloves garlic (minced)

1 small piece ginger (grated)

1 smoked fish or 1 cup dried anchovies (optional)

1 tsp ground crayfish (optional)

Salt and pepper to taste
Instructions:

Rinse soaked blackeye peas and boil until tender (about 45 minutes). Drain and set aside.

Heat palm oil in a saucepan, add onions, garlic, and ginger. Fry until golden.

Add blended tomatoes and cook down until sauce thickens.

Stir in smoked fish or dried anchovies if using.

Add boiled blackeye peas, season with salt, pepper, and crayfish. Stir and simmer for 10 minutes.
