Recipe: Banku with Okra Stew & Fish

Ingredients:

  • 1 pack Banku Special (2 balls)
  • 2 cups okra (chopped)
  • 2 tomatoes (blended)
  • 1 small onion (chopped)
  • 1/4 cup palm oil
  • 1 smoked fish or fried fish
  • 1 tsp ground pepper
  • Salt to taste

Instructions:

  1. Heat the banku: microwave for 2–3 minutes or steam until soft.
  2. In a pot, heat palm oil and sauté onions until fragrant.
  3. Add blended tomatoes and cook until slightly thickened.
  4. Stir in chopped okra and a little water; cook until tender.
  5. Add fish, pepper, and salt; simmer for 5–10 minutes.
  6. Serve hot with banku on the side.
