Recipe: Banku with Okra Stew & Fish
Ingredients:
- 1 pack Banku Special (2 balls)
- 2 cups okra (chopped)
- 2 tomatoes (blended)
- 1 small onion (chopped)
- 1/4 cup palm oil
- 1 smoked fish or fried fish
- 1 tsp ground pepper
- Salt to taste
Instructions:
- Heat the banku: microwave for 2–3 minutes or steam until soft.
- In a pot, heat palm oil and sauté onions until fragrant.
- Add blended tomatoes and cook until slightly thickened.
- Stir in chopped okra and a little water; cook until tender.
- Add fish, pepper, and salt; simmer for 5–10 minutes.
- Serve hot with banku on the side.
