Recipe: African Black Beans Stew
Ingredients:
- 2 cups African black beans (soaked overnight)
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 1/4 cup palm oil or vegetable oil
- 2 tomatoes (blended or chopped)
- 1 tbsp tomato paste
- 1 tsp ground crayfish (optional)
- 1 tsp paprika
- Salt to taste
- Water or broth as needed
Instructions:
- Rinse and soak beans overnight, then boil until tender (about 45–60 minutes).
- In a pot, heat oil and sauté onions and garlic until fragrant.
- Add tomatoes and tomato paste; cook until slightly thickened.
- Stir in paprika, crayfish, and salt.
