🍲 Recipe: Tamarind Chicken Stew

Ingredients (Serves 3–4):

  • 1 lb chicken (cut into pieces)
  • 2 tbsp wet tamarind (seedless)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tbsp vegetable oil
  • 1 cup water or broth
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • Optional: chili pepper for heat

Instructions:

  1. Soak tamarind in warm water for 5–10 minutes and mash to release pulp.
  2. Heat oil in a pot and sauté onions and garlic until fragrant.
  3. Add chicken and cook until lightly browned.
  4. Stir in tamarind pulp and water/broth.
  5. Season with salt, pepper, and optional chili.
  6. Simmer for 20–25 minutes until chicken is tender.
  7. Serve hot with rice, yam, or fufu.
