Recipe: Classic Ivorian Grilled Fish with Attieke

Ingredients:

  • 1 package Nina Dry Attieke

  • 2 whole tilapia or mackerel (cleaned and scored)

  • 1 tbsp ginger

  • 1 tbsp garlic

  • 1 tsp black pepper

  • 1 Maggi cube

  • 1 tsp salt

  • 2 tbsp oil

  • 1 onion (sliced)

  • 1 green bell pepper (sliced)

  • 1 scotch bonnet (optional)

  • 1 lemon

For Attieke:

  1. Place Attieke in a bowl and sprinkle with water.

  2. Cover with foil and steam for 5–10 minutes or microwave covered for 3–4 minutes until fluffy.

For Fish:

  1. Blend ginger, garlic, pepper, Maggi, and salt into a paste.

  2. Rub paste inside and over the fish. Let marinate for 30 minutes.

  3. Grill or pan-fry fish until golden brown and cooked through.

  4. Sauté onions, pepper, and scotch bonnet in a little oil and serve over the fish.

To Serve: Plate the steamed Attieke, drizzle with lemon juice, and serve with the grilled fish and sautéed vegetables.
