Ghanaian Tuo Zaafi Recipe (Serves 4)

Ingredients for TZ Base:

  • 2 cups NINA Tuo Zaafi (Cornmeal and Cassava Flour blend)

  • 4 cups water

 

Ingredients for accompanying ayoyo soup (optional):

  • 1 bunch jute leaves (ayoyo), finely chopped

  • 1/2 cup dawadawa (fermented locust beans)

  • 2 tbsp ground dried pepper

  • 1 smoked mackerel or beef stock

  • Salt to taste

 

Directions:

  1. Prepare TZ:

    • Bring 3 cups of water to a boil.

    • In a bowl, mix 1 cup of cold water with 2 cups of the TZ flour to make a smooth paste.

    • Gradually stir this paste into the boiling water while stirring continuously to avoid lumps.

    • Stir vigorously for 5–8 minutes until smooth and firm. Cover and steam for 5 more minutes on low heat.

     

  2. Prepare Ayoyo Soup:

    • In a pot, boil chopped jute leaves with a bit of salt and dawadawa.

    • Add in smoked fish or meat stock and ground pepper.

    • Simmer until well blended, about 10–15 minutes.

     

  3. Serve:

    Scoop Tuo Zaafi into bowls and top with warm ayoyo soup and protein of choice.
