Ghanaian Jollof Rice Recipe

Ingredients:

• 2 cups long-grain parboiled rice

• 1/4 cup vegetable oil

• 1 large onion (sliced)

• 2 tablespoons tomato paste

• 2 fresh tomatoes (blended)

• 1 teaspoon minced garlic

• 1 teaspoon ginger (grated)

• 1 sachet Remie Jollof Rice Seasoning Powder

• 1 cup chicken stock (or water + bouillon cube)

• Salt to taste

• Protein (grilled chicken, beef, or fish – optional)

• Vegetables (optional garnish: carrots, peas, etc.)

Instructions:

1. Heat oil in a pot and sauté onions until translucent.

2. Stir in garlic and ginger; cook for 1–2 minutes.

3. Add tomato paste and blended tomatoes. Let it simmer for 10 minutes, stirring occasionally.

4. Pour in chicken stock and add Remie Jollof Rice Seasoning Powder. Stir well and adjust salt to taste.

5. Add rice to the mixture, reduce heat to low, and cover.

6. Allow it to cook for 25–30 minutes or until rice is done, stirring halfway to prevent burning.

7. Serve with fried plantains, salad, or grilled protein.
