🍲 Recipe: Classic Jollof Rice
Ingredients (Serves 4–5):
- 2 cups long-grain rice
- 2 tbsp Badia Jollof Rice Seasoning
- 2 cups tomato sauce or blended tomatoes
- 1/4 cup tomato paste
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 1/4 cup vegetable oil
- 2 cups chicken or vegetable broth
- 1/2 tsp thyme (optional)
- 1 bay leaf (optional)
- Salt to taste
Instructions:
- Rinse rice and set aside.
- Heat oil in a pot and sauté onions and garlic until fragrant.
- Add tomato paste and cook for 2–3 minutes.
- Pour in tomato sauce and cook until slightly reduced.
- Stir in Badia Jollof Rice Seasoning and mix well.
- Add broth and bring to a boil.
- Add rice, stir, cover, and reduce heat.
- Cook for 20–25 minutes until rice is tender and liquid is absorbed.
- Fluff and serve warm.
