🍲 Recipe: Classic Jollof Rice

Ingredients (Serves 4–5):

  • 2 cups long-grain rice
  • 2 tbsp Badia Jollof Rice Seasoning
  • 2 cups tomato sauce or blended tomatoes
  • 1/4 cup tomato paste
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup vegetable oil
  • 2 cups chicken or vegetable broth
  • 1/2 tsp thyme (optional)
  • 1 bay leaf (optional)
  • Salt to taste

Instructions:

  1. Rinse rice and set aside.
  2. Heat oil in a pot and sauté onions and garlic until fragrant.
  3. Add tomato paste and cook for 2–3 minutes.
  4. Pour in tomato sauce and cook until slightly reduced.
  5. Stir in Badia Jollof Rice Seasoning and mix well.
  6. Add broth and bring to a boil.
  7. Add rice, stir, cover, and reduce heat.
  8. Cook for 20–25 minutes until rice is tender and liquid is absorbed.
  9. Fluff and serve warm.
