Ghanaian Recipe Using This Product

Recipe: Kontomire Stew (Cocoyam Leaf Stew)

Ingredients:

  • 2 tablespoons NINA Ground Smoked Herrings Fish Powder

  • 1 bunch cocoyam leaves (kontomire), washed and chopped

  • 1 onion, sliced

  • 1 cup palm oil

  • 2 tomatoes, diced

  • 1 tablespoon tomato paste

  • 1 teaspoon ground pepper or chili

  • ½ teaspoon salt

  • 1 cup cooked egusi (melon seeds) – optional

Instructions:

  1. Heat palm oil in a saucepan and add sliced onions. Sauté until golden.

  2. Add tomatoes, tomato paste, and pepper. Simmer for 10 minutes.

  3. Stir in NINA Ground Smoked Herrings Fish Powder for a deep, smoky flavor.

  4. Add chopped cocoyam leaves and a small amount of water.

  5. Cover and simmer for 15 minutes, stirring occasionally.

  6. Add salt and optional egusi. Cook until stew thickens.
