Ingredients:

3 cups cooked jasmine or basmati rice

2 tablespoons Shito

1 tablespoon vegetable oil

1/2 onion, chopped

1/2 cup mixed vegetables (peas, carrots, corn)

2 eggs (optional)

Salt to taste

1 tsp soy sauce (optional for extra umami)

Grilled or fried chicken or shrimp (optional)
Instructions:

Heat oil in a wok or deep pan.

Add onions and sauté until soft.

Stir in mixed vegetables and cook for 2 minutes.

Push veggies to the side, scramble eggs (if using) in the same pan.

Add cooked rice and stir to mix.

Add Shito and soy sauce, stir-fry for 3-5 minutes.
