Recipe: Mackerel Chofi Stew (Spicy Tomato Fish Stew)

Ingredients:

• 1 can of Mackerel in Tomato Sauce with Chilli

• 2 medium onions (chopped)

• 2 cloves garlic (minced)

• 1 tbsp tomato paste

• 1 fresh Scotch bonnet (optional, for extra heat)

• 1 tsp ground ginger

• Salt to taste

• 3 tbsp red palm oil or vegetable oil

• 2 small bay leaves

• Optional: hard-boiled eggs or boiled yam/rice/kenkey for serving

Instructions:

1. Heat oil in a saucepan and sauté onions until soft.

2. Add garlic, tomato paste, ginger, and Scotch bonnet. Stir and let it cook for 3–4 minutes.

3. Empty the entire contents of the Mackerel into the pot.

4. Gently break the mackerel into large chunks. Add bay leaves and salt.

5. Simmer uncovered for 8–10 minutes, allowing the sauce to thicken.

6. Serve hot with steamed rice, kenkey, boiled plantain, or yam.
